Top 3 Reasons to go Organic…
1. Pesticides, Herbicides and Fungicides are know to be carcinogenic. Eating Organic foods reduces your exposure to these harmful toxins.
2. Organic Farming is Natural. Organic farms are more conscious of how the land is being treated.
3. Reduce the risk to Farm Workers. Non-organic farmers are exposed to potentially dangerous chemicals.
Here is one of my favorite recipes. Sunday is going to be officially Recipe Sunday. I am just catching you up still. Tomorrow will be a new recipe.
Heirloom Tomato Basil Salad
3 c organic heirloom tomatoes
3 c organic basil
2 cloves organic garlic
1/4 c organic goat cheese
1/2 c organic water cured kalmata olives
1/4 tsp c celtic sea salt
Wash vegetables thouroughly. Place the basil leaves in large salad bowl. Place cut up tomatoes on top of basil. Finely chop garlic and sprinkle in. Layer olives and goat cheese. Squeeze lemon juice on top along with celtic sea salt. Toss lightly and let marinate for 2-4 hours. Enjoy!

Where are you getting your organic water cured kalmata olives? I’ve never noticed this as an option before anywhere. Do share!?!

The olives come from Whole Foods Market. They are in the cold case where the goat cheese is and also you can buy them in a jar in the jarred foods isle. BTW, WFM is the only place I have found that has an organic goat cheese. It is plain, but I mix it with all kinds of things to make it yummy.
